Chick Salad Sandwiches


Whir a garlic clove in a food processor, or chop a garlic clove very fine. Add a can of drained, rinsed chick peas to the processor and pulse until they're broken up to the consistency you'd like (or do that in a bowl).

In another bowl, mix about 1/4 cup Vegenaise with 1-2 tsps mustard and 1/4 tsp salt and a few dashes of pepper. Add the chick pea/garlic mix and stir.

Add chopped veggies, like:

pickles
celery
capers
red onion
peppers
shredded carrots

Taste for salt and Vegenaise. Spread on bread. Add lettuce, tomato, and pickle—or don't!
